Yemen’s Humanitarian Crisis
Yemen is currently facing one of the world’s worst humanitarian crises, with over 20 million people—more than half the population—in urgent need of aid.
Widespread famine is a critical concern: many families lack access to sufficient food, clean water, and basic medical care.
Malnutrition among children is rising dramatically, and disease outbreaks exacerbate the crisis.

In recent developments, Israeli airstrikes have targeted Houthi-controlled areas, including the capital, Sanaa. These strikes have caused casualties and further destabilized the region, adding to the suffering of civilians.
The escalation of violence has compounded an already dire situation, making access to food, shelter, and medical aid even more difficult. Many civilians are trapped in conflict zones, facing daily threats of bombing, displacement, and famine.

Saltah Recipe: A Taste of Yemen
Ingredients:
1 lb lamb or beef, cut into cubes
2 tablespoons vegetable oil
1 large onion, chopped
3 cloves garlic, minced
2 tomatoes, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper to taste
4 cups water or broth
1 cup okra, sliced
1 large potato, peeled and cubed
1 eggplant, cubed (optional)
Fresh cilantro for garnish
Hilbeh (fenugreek paste)
Instructions:
In a large pot, heat the vegetable oil over medium heat.
Add the chopped onion and minced garlic, sautéing until softened.
Add the meat cubes, browning them on all sides.
Stir in the chopped tomatoes, cumin, coriander, salt, and pepper.
Pour in the water or broth, bringing the mixture to a boil.
Reduce heat and simmer for 1–1.5 hours, or until the meat is tender.
Add the okra, potato, and eggplant (if using), continuing to simmer until the vegetables are cooked through.
Serve hot, garnished with fresh cilantro and a dollop of hilbeh.
