Kibbeh: Syria’s Heart on a Plate

In Syria, Kibbeh is more than a dish—it’s a symbol of home, heritage, and hospitality. Made from finely ground lamb or beef mixed with bulgur wheat and spices, it’s shaped into ovals or patties and often stuffed with pine nuts or onions. Whether served raw (kibbeh nayyeh), baked (kibbeh bil sanieh), or fried, it’s a meal that brings families together, especially during gatherings and celebrations.
But today, Syria is not celebrating. Over 70% of its population—more than 16 million people—are in desperate need of humanitarian aid, with over 14 million unable to access enough food. The fall of the Assad regime in December 2024 has led to a power vacuum, leaving communities vulnerable to violence and displacement. In the south, the city of Sweida remains under siege, and in the northwest, millions are trapped in Idlib, facing ongoing conflict and limited resources.
As you prepare Kibbeh, remember that each bite carries the weight of a nation’s resilience and the hope for peace. It’s a reminder of the strength of Syrian culture and the importance of standing in solidarity with those who continue to fight for a better future.

Ingredients:
2 cups fine bulgur wheat
1 lb ground lamb or beef
1 medium onion, finely chopped
1/2 cup pine nuts, toasted
1 tsp ground allspice
1 tsp ground cinnamon
Salt and pepper to taste
Vegetable oil for frying
Instructions:
Soak the bulgur in cold water for about 30 minutes, then drain and squeeze out excess water.
In a large bowl, combine the bulgur, ground meat, chopped onion, allspice, cinnamon, salt, and pepper. Knead until the mixture is smooth and well combined.
Take a small amount of the mixture and form into an oval or ball shape, making a hollow center.
Stuff the center with a spoonful of toasted pine nuts, then seal and shape into a football-like form.
Heat oil in a deep pan over medium heat. Fry the kibbeh in batches until golden brown and cooked through.
Drain on paper towels and serve hot.
